Bella Baker is a small company in Bend, Oregon; Owned by Milena Burnquist and Stacey Bock. Milena was born and raised between Brazil and The U.S. and Stacey from Tucson, Arizona. Both met at their kid’s school and their relationship grew into a friendship.
With both their years of experience in Kitchen and Catering Production management and Milena’s Authentic Brazilian cheese Bread recipe which happens to be all naturally, gluten free, yeast free and sugar free. They are adventuring in this partnership together, with these delicious cheese bread/dinner rolls perfect for a party appetizers or BBQ’s.
Authentic Brazilian cheese bread crafted in a gluten free kitchen in Bend, Oregon? Bella Baker is a small company owned by Milena Burnquist and Stacey Bock. The two women bring years of experience in the kitchen and with catering into a dedicated gluten free kitchen where they prepare and freeze this traditional Portuguese staple for you. Having met at their children’s school, both ladies recognized a niche for fine gluten free bread that could be made here in Oregon. Milena brought to the Bella Baker partnership an authentic pao de quiejo recipe. The goal: to buy a bag or two or three and take them home to bake up in your own oven. Enjoy the aroma of fresh baked rolls and the chewy, soft cheesy-ness of this authentic Portuguese food for breakfast, as an accompaniment for dinner or as an appetizer. Delicious and wholesome, these rolls are naturally gluten free, yeast free, and sugar free.

After years of drinking the standard mediocre coffee, I had a life altering experience. After dinner in Boulder one night, we were served espresso. This single cup of wonder changed everything I knew about coffee. That single eye-opening coffee experience led to experimentation with home roasting and a vision of starting a company that delivered some of the finest roasted beans you can find. I have lived in Central Oregon for 15 years and now realize that I can offer this great community a solid product.

Late for the Future – Dark roasted, Fair Trade Organic Sumatran that has a rich chocolatey caramelized sugar and cherry flavor. Named after an album of the New Orleans super funk band, Galactic.
Inland Emperor – Organically grown Direct Trade Guatemalan Hunapu from the Antigua mountains. This nice medium/ dark roast brings out chocolate and tropical fruit hints. These beans are currently being served at Dudleys Bookshop and Cafe.
Named after the most recent Greyboy Allstars album and is also enjoyed by the band while on the road.
Slightly Roasted – Organically grown Direct Trade Costa Rican El Embrujado from the San Luis de Greca region. Another medium roast with chocolate, sweet, and bright hints. This coffee is supported by the Southern California sounds of Slightly Stoopid.
Travelin’ Light – Organic Decaf from Peru, using the Swiss Water Method of extracting the caffeine. This method uses no chemicals during the process. This one is named after the late and great JJ Cale, a master of his art and influential musician.
Karen Taylor of KT Energy Bars
Karen Taylor, former owner of the Sage Café in Northwest Crossing, recognized the need for delicious and nutritious gluten free and paleo snacks for the busy Central Oregon lifestyle. She began selling her Energy Bars at her café and at Newport Market. Increasing demand for her products brought her to our dedicated gluten free kitchen and she has expanded her distribution to over ten locations in Bend. Along the way she developed a delicious and very popular paleo cookie that is flying off the shelves.

Veronica Robinson with Lovelight
Eating mindfully in a fast-paced world is a challenge. Veronica Robinson of Lovelight takes the time (you might not have) to make eating on the go healthy, practical and delicious. She and her family have always been mindful of what they eat, and she shares her time-honored and family appreciated recipes with her customers.
Veronica bakes using brown rice flour and sweeteners are used sparingly. Nutrition and flavor are always foremost in her mind. For example, fresh strawberries grace her strawberry banana muffins and wholesome and nutritious flaxseed flour is a main component of her delicious and versatile Belgian waffles. Customers are known to use her waffles in the traditional breakfast slot with real maple syrup, or yogurt, or peanut butter, and then return to purchase more waffles as they have also discovered that they serve well as a sandwich bread. Their chewy texture and satisfying flavor make it difficult to believe that they are gluten free, milk free, egg free and soy free. Try them at your own table, today!
Susan & Tom Walker Gotta b Gluten Free
Owners Susan and Tom Walker use a variety of flours, but our favorite is a garbanzo/fava and sorghum blend. Our blend not only has a wonderful moist texture, but it is packed with protein and fiber for better health. Doctors recommend the use of garbanzo flour for diabetics because it has fewer carbohydrates than rice flour.
Susan enjoys the challenge of adapting family favorite or cutting-edge trending recipes to the parameters of gluten free cooking. In this process, she reduces the sweeteners and will ‘tweak’ some of the ingredients to make the end product truly original. For Susan, it’s all about the creativity and the problem solving of the gluten free process. Oh, and the smiles from her customers as they take that first bite is always her ultimate goal.
Tom likes smiles, too. His goal is to create food that is gluten free and is as good or better than what he remembered when he could eat gluten. If it is doesn’t taste good, Tom isn’t interested. That would be why he has spent many hours developing gluten free pizzas and rolls and desserts that he is proud to say are gluten free and delicious.
About GOTTA B Gluten Free Facilities
We want our customers to be confident in knowing that cross-contamination with gluten is not an issue at Gotta B Gluten Free. Our bakery and kitchen is a dedicated gluten free facility. All of our bakers understand the necessity of using gluten free ingredients that are sourced from gluten free producers that are also dedicated or certified gluten free. No products containing gluten are allowed in the Gotta B Gluten Free premises, either. We do, however, use tree nuts and legume flours. And while we are careful to keep cross contamination of tree nuts and/or legumes at a minimum when moving from recipe to recipe, because nuts and legumes are used in some recipes, people who are especially allergic to either tree nuts or legumes should avoid eating our products.
A talented group of dedicated gluten free bakers and chefs create delicious food in our gluten free kitchen. All items are subject to availability.
Susan uses garbanzo bean flour because of its lower carbohydrate and higher protein content. She bakes many of her items using a garbanzo/fava bean and sorghum flour mixed with tapioca flour, cornstarch and potato starch (to lighten the heavier flours and to eliminate the bean flavor). She also uses coconut and almond flours in some recipes.

While we are available at the bakery for retail sales, all of our items are frozen. We have items for breakfast, snacks, lunch and dinner, and wonderful celebratory cakes, pies and special order products.

Are you diabetic? Doctors recommend that diabetics use garbanzo bean flour because of its lower carbohydrate and higher protein content. Susan bakes many of her items using a garbanzo/fava bean and sorghum flour mixed with tapioca flour, cornstarch and potato starch (to lighten the heavier flours). She also uses coconut and almond flours in some recipes (the Lovely Lemon Bars are made all the lovelier because of the addition of coconut flour). Susan will happily make her products using proportions of the sweeteners that are diabetic friendly. Ask her about this option.
